Flippin' Excited For Pancake Day!


Hello Lovelies,



Tomorrow is that wonderful day that is Shrove Tuesday, a day to thoroughly indulge and gorge ourselves on pancakes before the start of Lent.

If you've been around a while then you will know that I am a serious pancake girl, as a child my brother and I would wake up every Sunday to the smell of pancakes.  This is my mothers tried and very well tested pancake recipe which is simply the best!    




For these light and fluffy pancakes you will need:

1 cup self-raising flour
1 cup of milk
1 egg


All you need to do is throw it all into a large jug (get your whisking arm ready) whisk like crazy until you have a smooth batter then pour it into a frying pan on a medium heat, and wait for the bubbles to appear before you flip those babies over.   


If you're feeling naughty then these are the perfect pancakes for you.  However they do have a healthier cousin, the Deliciously Healthy Pancake, so take your pick, are you going all out before Lent or are you keeping to that healthy balanced diet!!!

Deliciously Healthy Pancakes

One of my favourite ways to start the day is with a stack of yummy pancakes.  

Traditional pancakes are not one of the healthiest of breakfasts, but these deliciously healthy protein-packed ones are the bomb dot com!  They only take about five minutes to make and are packed with enough fibre to keep you full and fuelled for hours. 

What more could you ask for in a breakfast?!







Serves 2 (or one hungry horace!)
Ingredients:

  • 1 cup of oats
  • 1 egg
  • 1 teaspoon of cinnamon
  • 1/4 cup apple puree
  • A pinch of salt


 Toppings:

  • Fresh fruit
  • Honey
  • Fresh yoghurt

Method:

  • Heat a non-stick pan over a medium heat or use the simmering plate of your Aga. 
  • Next grab your NutriBullet or blender and blitz together the oatmeal, egg, puree and cinnamon. 
  • Then spoon the batter into the heated pan as you would normal pancakes.  
  • (If you're new to cooking pancakes then once you start to see holes/bubbles forming on the top side of the pancake and the edges are golden then it's time to flip them and briefly cook the other side.) 
  • Once cooked it's time to stack your pancakes high and cover in your favourite toppings.


I'm pretty conservative and like to serve my pancakes with fresh fruit, and a drizzle of honey, but feel free to go wild!
